I am a bit confused by the different rarity colors because sometimes a Purple skin is more expensive than a Red one from a different case. Why does the community value some Restricted items more than Covert ones that are supposed to be much harder to find? I want to understand the logic behind these price discrepancies before I start buying more items for my inventory.

The rarity color usually just tells you how hard it is to pull that skin from a case but it does not account for the popularity of the design. A very famous design on a Purple skin will always be worth more than a boring design on a Red skin. Also some lower rarity items are used in trade up contracts to get much more expensive skins which keeps their price high due to demand.
