So for some reason my DayZ SA server says some dude named Shwarma is the server manager but this is not the case, I am. I created an account to fix this but you require me to rename the server. The problem is that DayZ servers cannot be renamed w/out including certain key pieces of info . . . like you cannot literally name the server whatever you want. How can I fix this? I do not want some random person to be perceived as the owner when I am.

If you cannot put the text "GameTrackerClaimServer" anywhere in the server name, you would not be an admin of the server. Perhaps you are misreading the instructions - the name only needs to contain the text.
