There exist any way for disabling GameTracker stats? I saw that you can "reset" them, but I didn't find anyone for disabling server stats

Hello,
You could block the GameTracker IP's. http://www.gametracker.com/forums/forum.php?site=1&thread=42545 Unfortunately CS doesn't have a setting for stats reporting so anyone (eg. one of the many tracking websites) will still be able to scan it (whoever is not blocked from doing so).
