How to disable server variables?

There is no feature to hide the server variables page.
However, if your server did not report the extended information, GT would have nothing to show. No, I am not aware of any server configuration options that might allow you to do that.

You could try creating a plugin to do this. (Simply don't reply with the info, so gametracker is unable to show it)
